My great-grandfather (Christian Claus Eli) traveled on the Teutonic in November of 1894 with a friend Jens Herstad. The only information I have so far is this:

emigration from Trondheim 27 November 1894 -- a rather cold time to be starting out. His destination at that time was listed as" Benson, Arrizona". Traveling with him was a Jens Herstad, age 20, also from Borsa and going to the same destination.
They were leaving on the feeder ship Juno which would have gone to England and from there he would have taken another ship to America. As shown on the photo, he did go by ship to New york on the Teutonic from Liverpool, arriving 13 Dec 1894. His wife and family stayed in Norway 2 more years before joining him.

I have found him in the census living in Borsa on the Lilleaas farm in 1865. He is listed as a foster child, b. 1855, living with two widows. It does not indicate they are related to him. From here it will take some digging ... the bygdeboks are not indexed except by farm. But a foster child may not be listed and probably didn't come from the farm he was living on. He was probably on one of the AEle farms at some later point and from there came the name he took at emigration. If we're lucky, that's the farm his wife came from. I will check church records before getting into the books.

If anyone has information that may be related to this, please let me know.

Could this be his mother in census-1865? According to his christening record, Christian's mother was from a Viggen farm in Børsa.

And could this be his father?

Christian was born out of wedlock.

Yes,
Berit on the Krangsaas farm in census-1865 is your great-grandfather's mother.
In 1865 she is married to Nils Olsen. Here is the chr record of their daughter Oline:

Christening: 12 Dec 1858, Børsa, Sør-Trøndelag
Parents: Nils Olsen from Selbu & Beret Gudmundsdr Viggen

It is probably of interest to see the following records.
Beret Gudmundsdatter Viggen (32) and Nils Olsen Engan (39) married Aug 20 1860, see #28
Nils father was Ole Thomasen Engan and Berets father was Gudmund Mikkelsen Viggen.
(Note that Berets father was a witness at Christians baptism)
Nils Olsen was born Oct 19 1821, see #42
his parents were Ole Nilsen Øvervig and Berthe Nilsdatter.
Ole Nielsen and his parents in 1801 are here
Beret was born June 5 1828 and her baptismal record is #15
her parents Gudmund Mikkelsen Kalvhagen and Karen Olsdatter.
Gudmund Michelsen (34) and Karen Olsdatter (23) were married June 27 1823, see
#1

Gudmund Michelsen was born 1788 and bapt. Febr 3, see the third child here
his father Micel was at Stenlien, in 1801 his family is here and Gudmund is a farms hand here
Karen Olsdatter was born 1800 and bapt. April 6, see the tenth cild from the top in the far right hand column here
her father was Ole Ellingsen Wiggen. In 1801 they were here

Christian married Ingeborg, date and information unknown to me. I do not know Ingeborg's maiden name. She stayed in Norway for 2 years after Christian came to the US. If anyone can find any information on that also, it would be greatly appreciated.

I think this is Christians Ingeborg with 4 children, see here
The oldest daughter Berntine Eli was born Aug 10 1884 and baptized Ingeborg Berntine in church on Nov. 23. See #18
her parents was Miner in America Kristian Jørgensen Eli and Ingeborg Larsdatter. (The father was at the time in America)
Ingeborg was born July 14 1851, see #45a
her parents were Lars Larsen Rekstad and Ingeborg Stephensdatter.
In 1865 Ingeborg is here
her mother Ingeborg Stephensdatter died Dec 18 1859, see #54
Lars and Sivert in the 1865 census are her brothers born May 19 1855 and March 8 1859 respectively. (Randi Olsdatter at the 1865 census is Ingeborg Ingebrigstdatters daughter from her first marriage)

Lars Larsen (37) and Ingeborg Stephensdatter (23) married July 16 1847, see #14
Lars father was Lars Olsen from Rekstad and Ingeborgs father was Stephen Olsen from Skjellum.
Ingeborg Stephensdatter was born Oct 17 1824, see #19
her parents were Stephen Olsen and Berith Olsdatter.

I hate to ask for more since you have found so much but Christian Eli was living in Borsa on the Lilleaas farm in 1865 with two widowed women. He is listed as a foster child. .......wondering if one could be a grandmother of his. Can you see the names of these women. Thank you!

I thought you had the 1865 census for Lilleaas, in any case it is here
it looks like it is Berit Pedersdatter who has Kristian as a foster child, Kirsti Toresdatter could be either her mother or the mother of her deceased husband.
