My great grandfather, Steen Olsen and his family (Thomine, (wife) children: Anna, Ole, Knud, Gunder, Thorwald, Halder) sailed from Glasgo, Scotland in Aug 1869. I'm researching how they got to Scotland, by what means?

Steen Olsen, his wife and 4 children were in 1865 living in Tromøy. In May 1866 they moved to Arendal, see #23-28 The baptismal record for his wife Thomine Andrea is #117 The record for "Indflyttede" in Arendal is #41-46 the intention was to work as a carpenter. Thorvald was born in May 1866 in Arendal. Have not found any record for moving out from Arendal.

I am shocked, really shocked to hear that there were not other ways to travel in those days, not even a bridge across the ocean, sheesh.
A sincere posting deserves a sincere reply and to that I recommend you read some of the excellent articles on this site regarding the transit from Norway to North America at that time.

They would have left from a major port, took a feeder ship to Hull, England and then about a 7 hour train trip to Liverpool or Glascow and then they would connect with their ship to cross the ocean.

The Anchor Line had a feeder service between Christiania (Oslo), Christiansand (Kristiansand) and Leith in Scotland in the years 1869 and 1870. The route also included Gothenburg in Sweden. Here is the list of 1869 sailings: Christiania - Christiansand - Leith in 1869. The service was intended as a feeder service for the Anchor Line transatlantic service out of the port of Glasgow for New York. Maybe this is how your grandfather and family traveled? Read More about the: Anchor Line. I am including a scan of an announcement from 1869 below.
