how did he end up with the last name Soiland? Is this a case where a farm name became the last name?

Yes, Søyland is a farm in Lye parish (Gjesdal) where his father Velas Gundersen came from. Map: http://kart.gulesider.no/m/9nWt7

In 1855 Velas Gundersen had another son, Ingvald, (baptism nr 95) http://www.arkivverket.no/URN:kb_read?idx_kildeid=6333&idx_id=6333&uid=ny&idx_side=-164
They had moved to Stavanger town, and Velas Gundersen here used Søiland as an extra family surname, not an address surname.

They probably later on moved to Søyland in Gjesdal, and when the two sons Halvor and Velas moved to Stavanger, they took in use Søiland as a surname.

thanks much for all this information. Didn't know there was an 1885 census - it is not a button choice on the DA menu and I have never seen it come up on a global search. How do you access it?

It was only an urban census and all parts of it may not have been put into accessible electronic database form. You have to search by AREA and look at all the databases available for an area to encounter.
