I can't find this person in any of the Norwegian census, but here is what information I have on her:
Parents Johan Jakob Ellingsen, Marte Ivarsdatter
Bergithe B; Apr 4 1840 Hoiland M; Soren Larsen Skartvedt June 1 1874

this is all correct. Its when the family moved to Hetland Parish when I was no longer able to track her on the census. I have tracked her in church records, but I'd like to know where she was living from 1865 to 1920

I think that Jackie has found the right person in the 1875 Census. Here is the baptism of the son Laurits. The mother is a Birgitte Jacobsdr.

The couple was married on June 1, 1874. The father of the bride is named John Jacob Eliingsen. Also birth date for Birgitte is April 1, 1840 which fits the above records.

Enkemand = widower

So Birgitta was already passed on when Soren died.
