I have records for my fathers family from Meby Farm, Broennoey Parish, Nordland dating to 1779 and my mothers family from the Bergen and Drummond area going back to the 1850's. They all seem to have emigrated to the U.S. between 1880 and 1890. I also have the first pages of the family bilbe but it's in norwegian and I can't read it.
Where do I look to find out how and exactly when they got here?
My parents were born in Marinette and Pestigo, Wisconsin.

Does the names in the census data from Meby farm in Brønnøy (Brønøe)for the years
1801 or 1865 match with any information you have?
1801:

Christopher Christensen age: 89 widower 2nd marriage

1865:
Hans Olss. farmer age: 51
Katrine Jonsd. wife age 56
Johan Hanss. son age: 23 unmarried
Jacob Hans. son age: 19
Hans Hanss. son age: 17
Johanna Hansd. daughter age: 26
Hanna Hansd. daughter age: 25

The Digitalarkivet (the link is below) has emigrant lists. Click on Categories, Emigrants and then registers. You should be able to find them there. Your fathers family probably sailed from Trondheim and your mothers from Bergen.
In the US, the 1900 census would list the year they came over and also if you can get a copy of their naturalization papers, they would give you more info.

Brining is right, here's the little family in the emigration protocols of Trondheim:
28.07.1888 Magnus Benjamins. married Worker age: 26 from Brønø to Shawano, Minn. Thingvalla Line via Christiania Tickets paid in America
Julie Benjamins. Wife age: 23
Sivert Benjamins. Child age: 6
