What I'm looking for is her mother. So far have tried Geni, FH Lib and scouring parish registers. Have looked for marriage records for the father but no luck. If the info is in this bapt record great, I just don't know how to read it. Can anyone help ?

I can't see any mention og the mother here. Neither is it included innthe transcription:

These are "reintroductions" for women who have given birth in 1738, match the dates and ordinal numbers to the baptism records and you should have the correct woman:
Ministerialprotokoller, klokkerbøker og fødselsregistre - Møre og Romsdal, SAT/A-1454/528/L0390: Ministerialbok nr. 528A01, 1698-1739, s. 482-483

In this case we may also compare the domiciles, which are listed for both the baptised children and the reintroduced mothers. Stoche is the domicile listed at the baptism, and going through all the reintroduced mothers in Borgund in 1738, beginning after the baptism on Sept 21 and scanning a handful of weeks after that, we find that Malene Jonsdtr of Stocke was reintroduced on November 1st.

Almost certainly the same woman as the Margrethe here.
