When my great-grandparents left Norway, they left with 3 sons and a daughter Charlotte, who was under 1 year old. Charlotte did not survive to make it to America. How can I find out when she died, if she died on one of the ships on the way over? What if she died in Hull? What did they do with immigrants who died in transit?

When did they come over? Finding them in the emigrant registers at the Digitalarkivet would tell you if she was on the ship when they left Norway and help determine what ship they arrived on. The arrival records could tell you if she made it through the voyage and might list deaths although not by name.
If she died on the ship she was more than likely buried at sea.

Jeanne, my great grandparents are shown leaving Stavanger and then Plymouth with a son and a baby daughter, and that is shown on the ships list but the list of them arriving in Australia only lists them and their son. Unfortunately the ship's list only listed the number of deaths on board but none of the people who died were listed by name.

We can only assume she was buried at sea as we checked the death's in Adelaide for that period and her death in Australia is not recorded and no family there had heard of her existence until I found the ship's list.

you may have to make an assumption (as I did) in this case
