You can use this map and search for the farms. I assume you will find your way in the Norwegian language.
I have tried and this is my proposals
Fosshaugen - search for Fosshaugen Sogndal, no farm today, place in a village
Hæggeteig - does not exist
Wensæ - search for Venes Sogndal and click on Vines (Gårdsbruk)
Scharsbøe - search for Skarsbø Sogndal
Ulfvisager - no hit, but there are persons with the last name Ulviksbakken
Stedje - search for Stedje Sogndal, no farm today, several hits in the Sogndal village.

Hi,
Some additional information that may be helpful for you.

Ylvisager is current Ylvisåker.
You will find a picture of the farm including two Skardsbø farms here in Sognafoto.
Enter Sogndal-Alphabetically -Categories-Fams.

Fosshaugen is developed area and includes Fosshaugane Campus

Here is an overview of the location of Fosshaugen (red circle), Skardsbø, Stedje (The kings property before 1663) and Ylvisåker.

A curiosity.
The two brothers Bård and Vegard Ylvisåker are two popular artists in Norway with it´s own tv-show often parodies of other artists. Also mention folk singer Olav Stedje from Sogndal.
