Sure, if the records exist, you should be able to go back.
Have you looked for them in the 1801 census? If you find them that could give you an approximate year of birth.
Have you harvested all the information from their marriage record? Sometimes marriage records give their ages as well as their father's names, occasionally occupations and places of origin.
For most parishes in Norway the church records go back to the mid-1600s. For those areas where the records survive you can research in records which recorded birth/baptisms, marriages and death/burials. The older records can be more difficult to read the handwriting but if you concentrate and work at it - it is very possible.
