While researching my family i found out that up until 1900s the children in Norway were called after the fathers first name , so this would be the reason for , Hans to become Pederson after they were married, as his father was Peder

The UK National Archives in Kew have two records for an Olaf Pedersen from ship's crew agreements, both for voyages in 1881:
1. Record ref BT99/1322/78, voyage of the vessel Dago, official number 68965, Master G W Haddock. Crew agreement includes Olaf Pedersen, able seaman aged 24 (ie dob ca. 1857) born Norway, previous ship Europia
2. Record BT 99/1304/11, voyage of the City of Agra, official number 29149, Master Thomas Young. Crew agreement includes Olaf Pedersen, able seaman born 1855 Norway, previous ship the Swedish barque Ida.

Copies of crew agreements can be ordered from NA.

The Norwegian Archives Digitalarkivet have seaman's roll (sjomansruller) records for Stavanger, 1860-1900. (Maybe available for other ports too ??) There is an Olaf Johan Knudsen Pedersen listed, roll number 3083 with a dob 27 April 1851.

The UK National Archives also list medals and awards for military services and merchant seaman. Many Norwegians served in British Army and Navy in WW1 and WW11. NA's list includes about 80 Pedersen's, including a Hans Peder Pedersen, but no Olaf

The Crew List Index Project (access C.L.I.P. site via Internet) shows 8 records for Olaf Pedersen, six of whom born in Norway - birthplaces shown as Fredrikstad and Eckefjord/Heckefjord. Yo can access via Findmypast. A couple of these records cross-check with those held in NA Kew. Regards
