The children were young when their parents died, what happened to them--put into foster care? raised by other family members? orphanaged?

Interesting question and one I'll look into - just a shame the 1921 census isn't going to be available for another 7 years!

Here are some Jenny (any last name) born 1878 at Digitalarkivet searching with the "new" page advanced person search in church registers. This tells you the name of the child, date of birth, date of baptism and which parish register book the information is found in and transcribed from. None of the Norwegian baptism databases are completely comprehensive at either Digitalarkivet or familysearch.org. If you search at Digitalarkivet once you have generated a list you are able to click on the record and see the names of the parents. Most baptisms do not express the surname of the child:

Jenny Amalie 16.09.1878 26.12.1878 barn
Ministerialbok for Bragernes prestegjeld 1878-1885 (0602aB)

Jenny Robine 07.06.1878 28.07.1878 barn
Ministerialbok for Hammerfest prestegjeld, Bysoknet sokn 1878-1889 (2001Q)

Jenny Constance 24.04.1878 30.06.1878 barn Ministerialbok for Nedre Eiker prestegjeld 1878-1885 (0625Q)

Jenny 01.10.1878 19.10.1878 barn Ministerialbok for Rendal prestegjeld, Ytre Rendal sokn 1878-1901 (0432Q)

Jenny Marie Aas 00.11.1878 01.12.1878 barn Ministerialbok for Trondheim prestegjeld, Domkirken sokn 1877-1891 (1601M2)

Jenny Antine 27.01.1878 17.02.1878 barn Ministerialbok for Trondheim prestegjeld, Vår Frue kirke sokn 1873-1879 (1601M5) found 1 Jenny with this date but was listed as born in Fredrikshald

Jenny Rebekka Ingeline 22.01.1878 10.03.1878 barn Ministerialbok for Ålesund prestegjeld 1878-1885 (1501P)

Jenny Kirstine 09.08.1878 01.09.1878 barn
Ministerialbok for Sem prestegjeld, Slagen sokn 1878-1891 (0721P)

I haven't looked at each one but the Jenny Kirstine b. Slagen in Sem for instance, father is listed as Jørgen Jørgensen and this may be the same man as Gullik Jørgensen skibsfører mentioned before.

Following are the confirmations from the same Jenny b 1878 search above. Confirmations happen in mid-teens years and the records sometimes include parents names, confirmands birth place and date. Again the database is not comprehensive:

Jenny Charlotte Slang 07.07.1878 Arendal Strandgata 498a 01.10.1893 konfirmant Ministerialbok for Halden prestegjeld 1890-1906 (0101P)

Adding to the list of names a Jenny Larsen age 17 immigrated from Oslo Sept 13, 1895, born in Rakkestad, Ostfold. Born April 24, 1878, father is Lars Pedersen and mother Anna Sofia Olsdatter. See number 15.

Right now I cannot seem to access the old Emigrants from Oslo 1867-1930 to determine her destination.

She must have returned since this appears to be her in 1910 & I'll take her off the list.:
