Another question on Sponsors - Is their a "standard" on who would be sponsors? i.e. two from Far side of the family and two from Mor side of the family.

No it's not common but if you look at the space allowed for the fadder in this book you will see it's quite limited. The writer apparently was clever about abbreviating.
Generally, there are no rules in these customary things that cannot be broken. Usually the fadder are family and friends, sometimes other parents who happened to be there the day of the baptism (because they are baptizing a child .)
