I'm trying to locate Ole Kristian Andersen (b. 1837) who emigrated in 1866 and assumed the surname HEDRUM in the US.

Hedrum is the name of a parish and a municipality in the (old) Vestfold fylke (county). There is one matching Ole Kristian Andersen in the 1865 census for Hedrum: https://www.digitalarkivet.no/census/person/pf01038123000005

The mother's name was Inger. Did your relative assign any of his children a similar name?

In the above census Ole Kristian lived at a farmed named Bergene. There is an entry in the Hedrum parish book for one ungkar (bachelor) Ole Christian Andersen Bergene aged 28 1/2 emigrating to North America in 1866: #33

Bergene is Bergan in the local dialect. Here is a page from the piece on Nedre (lower) Bergan in Hedrum Bygdebok. (Vol II, author Jan W. Krohn-Holm, 1978.) Ole Kristian's father was named Anders Eriksen. He died just before the 1865 census.

According to the bygdebok, Ole Kristian's parents acquired nedre Bergene farm only in 1842, and accoring to the 1865 census, Ole Kristian was born in neighbouring Eidanger parish. Here (#44) is the baptism record, saying he was born on Nov. 8 1837.

(Beware that a faulty transcription is posted on Digitalarkivet, giving a wrong year of birth. It links to the above image as the original source, so it can safely be disregarded.)
