 My Great Grandfather: Johan Edvard Martinsen Hunn

My great grandparents lived on a farm named Hunn in Ostfold. My great grandmother, Helga Hunn, was easily tracible back to the 1700s. I cannot find any information on my great grandfather's side, as he obviously took the farm name and his father's first name for his last name before that. Does anyone know anything about this family or how I would go about finding out what my great grandfather's family name might have been?

You have not said anything about what time your great grand parents were on the farm Hunn.
If they were there in 1900, this
may be the right ones.
Johan Edvard was born in 1848, the scanned parish register shows that he was born Oct 28, see #54
his parents were Martin Jensen and Malene Ingebrethsdatter.
Martin and Malene married Oct 5 1832, see right hand page #8
Martin was 22 years old and was living at Hunn.
In 1865 they are here
Martin was born April 28 1810, see #12
his father was Jens Gøtesen and his mother Inger Christophersdatter.

Malene was born Nov 20 1812 and bapt. 4th sunday in Advent = Dec 20, see top of right hand page here
her parents were Ingebreth Johnsen and Marthe Erichsdatter at Lilleborge.
You will find Ingebreth at the 1801 census here
his parents were John Ingebrigtsen and Lisbeth Ingebrethsdatter.
Ingebreth and Marthe were married Oct 21 1804, see #15
At the 1801 census Marthe is here
her parents were Erik Svendsen and Mari Hansdatter.
Erik Svendsen and Mari Hansdatter were married Oct 21 1781, see
#26

John Ingebrigtsen and Lisbeth Ingebrethsdatter (actually Elisabeth Olsdatter, Schiellind) were married April 21 1771, see left hand page, right hand column, bottom record here
See also LDS for John Ingebretsen.
John Ingebrigtsen was actually baptized Jonas July 5 1737. See next to the last record left hand page
here
Elisabeth was baptized Dec 10 1744, see right hand page #2 from the top here

Maybe you are interested in the marriage record for Johan and Helga, it is #12
You probably knew that Helga was Helga Josephine Pettersdatter.
Helgas baptismal record is #27
she was baptized May 11 and it looks like her grandfather was one of the witnesses.
