Simon Pedersen Stundalen in the 1801 census was married three times so Johanna Lassedatter age 43 wasn´t Knud Simonsen Stundalens mother.
Simon Pedersen Stundalen married Johanna Lassedatter Flom June 5. 1795, top left page.

Note, one of best men was Knud Bielde (means Bell), one of the civil war soldiers was John Bell

You are right Kċre, his mother Giertrud Knudsdatter died in 1893 in connection with the birth of twins who at her burrial August 1 was still alive. Giertrud Knudsdatter was 40 years old when she died. See 3rd burrial record from the top of right hand page

Then Knud Simonsens mother must be Gjertrud Knudsdatter Bielde (Bell) Einar, engagement Mai 20. 1777, left page 2. wedding from bottom:
20 Maji E.M. "Enkemand" Widower Simon Pedersen Stundal and Gjertrud Knudsdatter Bielde married June 25. 1777.

Was Simon Pedersen trom Stundal or was Stundal inheritance after his 1. wife?

Simon Pedersen died on Stundal August 23, 1824 age 87 #27.
From the death record and the 1801 census we can assume he was born between 1737 - 1743.
