There is no info about WHEN she might have died except that her husband appears to be a widower in the 1801 census and she would have died at or AFTER the birth of the last known child born to that couple. So you can narrow your search to between those years.

What is your source for that approximate birth year? It is based on something reliable?

Thanks for the help. Here's what I have relating to Kari Nielsdtr.
The bap. date for Kari came from two family tree's on Ancestry.Com. (1) Gilbertsen Family Tree and (2) Gulden Public Tree.
Here is what I have on Ellen (Elling) Steffensen Rustad Javnaker.
He was bap. 9 Feb 1721.
Married Kari 11 Jul 1747Javnaker.
Died 13 Jan 1805 on Gulden Jevnaker.
His parents were Steffen Gulbrandsen and Karen Knudsen.
Ellen Steffensen and Karen (Kari) Nielsdtr had the following children:
1. Marthe f.13 aug 1747-d. 22 Dec 1829
2. Kiersti f. 26 Jan 1749-d. Jun 10 1802
3. Margretha f. 28 Feb 1751-d. ?
4. Kari f. 4 Nov 1753-d. ?
5. Elli f. 26 Sep 1756-d. ?
6. Ragnil f. 18 Mar 1759-d. ?
7. Steffen f. 21 Mar 1762-d. ?
8. Anna f. 30 Jun 1765-d. ?

At this time I believe the following:
Karen Nielsdtr's parents are Niels Kristoffersen (f. abt 1684 and died 6 Aug 1752 at age 68) on Gubberud, Vardal, Oppland.
Niels Kristoffersen married Anna Michelsdtr (f. abt 1670-d. abt 1738) on 2 Apr 1711 in Vardal.
They had the following children:
Elli f. abt 1712 on Guggerud
Anne f. abt 1714 on Gubberud
Kristoffer f. abt 1716 on Gubberud
Michel f. abt 1719 on Gubberud
Berte f. abt 1721 on Gubberud
Kari f. abt 1725 in Vardal or Jevnaker
The information I have thru LDS Family Search is that Kari Nielsdtr was born in Jevnaker but I question that as Niels Kristoffersen died in Vardal in 1752.
At present I am searching thru the Vardal parish records but they are not configured in the usual form and the writing is difficult to read.
Thanks for any info available.

The free databases at familysearch.org seem to agree with your listing of children born to Ellen and Kari. If you've actually studied the records of those births you probably have farm residence names for those dates.

If this were my own search and I was quite determined to sort out information on 'Kari Nielsdtr' I would consider ordering LDS microfilm of the 1659-1857 Kort register for the Sorenskriveri (Hadeland, Land, Valdres, Oppland). There are 3 microfilm reels of the Kort register (court index) of probates sorted in alphabetical order by name of the farm of residence. This index is a card index of the summary details of each probate which lists the volume and page number for finding the full probate. Personally I can rarely read a full probate file but an index is of tremendous interest -- usually listing date of death, age, and family survivors. That information alone is vital. But you always then have the option of working with the full probate file too.

I have used these Hadeland, Land, Valdres probate index files on the LDSl microfilms before and found them fairly easy to deal with IF I had the name of a farm or a close spelling variation to that farm name that I could look for.

Information on Kari Nielsdtr. Gubberud.....
I believe my previous assumptions regarding the Kari Nielsdtr Gubberud born in Vardal, Oppland were incorrect. I have found later that this Kari Nielsdtr f.1725 Gubberud married a Peder Nielsen f. ca. 1725 in Vardal on Aug 8, 1750.
