 Christian Olsen-possibly from Dønum?

Year of birth 1825-1826.
Possible location : Dønum, Norway(thats where my great great grandmother lived when she married my great great grandfather)
The only information I can find on him is on my Great great grandmothers confirmation record.
Karen Mathea Christiansdatter was born Jan 27 1849

Her parents were Olea Christofersdatter and Christian Olsen. (Most likely Karen Mathea was born out of wedlock).

After that, I cannot locate any information on him. Did he emigrate to the US?Did he die soon after? Did he get married, have more children? Any assistance is greatly appreciated.

Your research is going to be very disadvantaged due to the lack of records in Eidsvold. This is from the 1865 census:

given name /fornavn containing "ristian" : cchristian, christian, christristian, cristian, hristian, kristian
last name / etternavn starting with ols: ols, olsen, olson, olss, olssen, olsson, olssøn, olsøn
year of birth / fodeaar 1826 +/- 2 years: 1824, 1825, 1826, 1827, 1828

Counties which contain (the number given) Christian Olsen following the above limiters:
Fylke Antall
Østfold 12
Akershus 37
Oslo 10
Hedmark 21
Oppland 20
Buskerud 15
Vestfold 13
Telemark 2
Aust-Agder 3
Vest-Agder 2
Rogaland 6
Hordaland 6
Sogn og Fjordane 2
Møre og Romsdal 3
Sør-Trøndelag 5
Nord-Trøndelag 8
Nordland 5
Troms 1
Finnmark 0
Totalt 171

The only county without at least one Christian is Finnmark. But further reducing the number by those who were born in Eidsvold finds only these 2 both in Akershus fylke, 1 in Eidsvold and the other in Urskaug. The one in Eidsvold is on a farm called "Dønumskeen". He might be the one you seek. Other possibilities are that your Christian Olsen was just travelling through at the time Karen Mathea was conceived and that he was born somewhere other than Eidsvold. Being on Dønumskeen might be a coincidence. Your Christian could already be dead by 1865 and not counted anywhere on earth.

Because of the gap in Eidsvoll / Eidsvold parish registers (due to fire) means you will have to study a whole lot of people who you might not end up being related to. Since it's likely that Karen was illegitimate she is unlikely to appear in her father's estate record.

Perhaps Christian fathered other children in addition to Karen. If such a child / children survived you might find them in the confirmation records same as your Karen Mathea's(since the baptismal registers of the era are gone). Collect their names and data.

You might be able to catch some "invisible threads" finding Karen as faddernes (godparent) to children of the possible Christian, that sometimes happens but evidence is very thin.
