Here is the marriage record for Ole Pedersen and Anna Thorsen (Anna Hanson) and it does not look good. The grooms father and mother do not match what we know

In the 1930 US Cencus for Minnesota I´ve found Ole Pedersen living in Stokes, Itasca, Minnesota, USA. He is born 1858, emigrated 1890. Married to Anna O Pedersen.

Yes, I thought so as well. however the marriage record for Ole Pedersen living in Itasca County gives his parents as Peder Olson and Kari Johnson. That does not match the parents for your Ole Pedersen.

See the data posted above for the Ole Pedersen from Itasca County.

Okay, Hilda went through Ellis Island and reported that she was headed to her uncle Mr. P.P. (and a name that looks like it might be Storsveen) living on Washington Street in Chicago.

There is a second page to the 1922 Erling Pederson trip in which he states his destination is his brother Ole Pederson who lives at 1112 Franklin Ave, South Minneapolis!

Didn't find a Pederson at 1112 Franklin Ave in the 1922 Minneapolis city directory but there is an Olaf Peterson at that address in 1922. Directories of 1919, 1920, 1921 find an Olaf/ Oluf Pederson at that address, a confectioner. The first year that Olaf was at that address was 1911, the first time Olaf appears in the directories is 1906 and then he lives at 2424 25th Ave S, occupation carpenter for C.M. & St. Paul Railroad.

So offer this Olaf Pederson as a possible death, check parents' names:

Was target's mother Johanne connected to an Anstad farm?

Olaf Pederson is buried at Lakewood Cemetery. This information from the Lakewood Cemetery web site:

Farm name of Johanne not readily apparent--it doesn't appear to be Anstad or Anstad like. Hmmm another great theory not yet proved out. Here is her baptismal record #4 right page:
