Looks like legal issues were in play. From the Daily Inter-Ocean (Chicago) 9 Dec 1886 pg 11 second section under the heading of "Superior New Suits"

"106,832 Jennie Johnson vs Peter O. Johnson, bill for seperate maintenance for desertion, P.G. Feeney, solr."

Daily Inter-Ocean, 7 Oct 1887 pg 10, col 2:
"62,251 Peter O. Johnson vs Jennie Johnson bill for divorce for adultery, D.F. Flannery, solr."

And then this, Daily Inter-Ocean on 10 Dec 1887 under the heading of "Chancery Court Judge Collins":

"Divorce- 2858 Peter O. Johnson from Jennie Johnson: for adultery"

FYI
"With Separate Maintenance, everything gets decided just like in a divorce case, including property division, child custody, parenting time and support, as well as alimony. The only difference is that when it is all over you can't get married because you are still married. ....One final note, even if you file for Separate Maintenance, your spouse can choose to counterclaim for divorce. So far have not located more information on Jennie after the divorce. But have found Peter:

Here is the transcription of the birth record of his and Ovidia Kaspara's son George:

https://familysearch.org/ark:/61903/1:1:NQY3-9L4

From Daily Illinois State Register 18 Nov 1900 pg 1 "Killed His Son"
"Chicago, Ill. Nov 17: Peter O. Johnson killed his five-year-old son, George, and himself to-day. Carbolic acid caused the death of both..."

The article goes on to describe Peter's despondency over his divorce from George's mother and the break up of their home. The former wife was awarded custody of their 2 children including George. In the census of 1900 Peter is living with the son George and a married couple Samuel and Alice Swanson and is listed as father-in-law, George as brother-in-law. Alice P. Johnson and Samuel Swanson were married during 1900. Alice is listed as born in 1879 and coming to US in 1890 and Peter is listed as coming to US in 1880. Information on these half siblings may be valuable since it may lead to information about Sophie and Jennie.

This confirm that Jennie and Sophie lived om.
I have tryed too see if they returned to Norway but have not so fare found them in the censuese from 1900 or 1910.
I have found one Sophie Johnson in US census 1940 as widowed living with a 3 year younger sister Hannah i Cook Illinois unmarried. Maybe or maybe not.

http://search.ancestry.com/cgi-bin/sse.dll?rank=1&new=1&MSAV=0&msT=1&gss=angs-g&gsfn=sophie&gsln=johnson&mswpn__ftp=Cook+County%2c+Illinois%2c+USA&mswpn=730&mswpn_PInfo=7-|0|1652393|0|2|3247|16|0|730|0|0|&msbdy=1885&msfng0=peter&msfns0=johnson&msmng0=jenny&uidh=ezc&pcat=ROOT_CATEGORY&h=145546612&db=1940usfedcen&indiv=1&ml_rpos=2

It seems that Peter divorced Ovida Kaspara Kaspersen too or she moved away from him?

It is en interesting case

Here is Caspara in the 1900 census. living with her son Arthur calling herself divorced:
https://familysearch.org/ark:/61903/1:1:MS3R-S18

Therein lies the tale since Peter lists himself as married in the 1900 census. I'm guessing she divorced him.

Not sure what it might contain but there is an inquest file on Peter's death. It might also be valuable if Peter had some sort of estate settlement, in which heirs might be listed.

What about Jennie's father's estate? Is she mentioned in it?

Her father had a house on the main street of Drammen containing 4 flats, He was married 3 times and got children with 2 of them.
His last wife survived him. He had only Julie in 1. marrige and 3 in second. One of the daughters was widowed after 7 children and lived in the house. She remarried with a man with 4 or 5 children and they where under social care. I believe the property just was sold and she used the money to live on. I have heard that there was some friendless in the family after this.
I know that there was an ad. in the newspaper that those who had something to claim after him should give notice.
To find more I must go to the State Archive in Kongsberg, 4 hours drive from here.

Mr. Jørstad's estate record would be of interest anyway. Perhaps you could email the archives and ask them for search since you have his date of death? The dødfallsprotokol for him might tell what you need to know about Jennie and Sophie, whether living or not and maybe where.

I searched through the Illinois pre 1916 death index for Sophie Johnson but there was none of an age + year of death that could be her.

Perhaps Jennie married another and Sophie was "adopted" by the new partner and they both have different last name than Johnson? There are numerous marriages following Dec 1887 up to 1900 of Jennie Johnson in Cook county.

The name Forselins. Then she must have changed her name or have been married between. Otherwise it may fit. I have seach for her and Sophie in Norway without any founds. This should say that her name would be Johnson still.

The name Forselin is very strange. The most similar I've seen is Forslin and most of the people with that name are Swedish. So may or may not be her.

Only 18, but that was not unusual at the time.
